Ingredients
- 1 1/2 lbs. boneless skinless chicken breasts
- ¾ cup ranch dressing or blue cheese dressing
- ½ cup buffalo sauce
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 12 ounces cellentani pasta
- 8 ounces cream cheese, softened
- 2 cups shredded cheddar cheese
- Salt and black pepper to taste
- 1 cup Monterey Jack cheese
- Minced jalapeño (for garnish)
Preparation
Start by bringing a deep skillet of water to a boil over medium heat. Add the chicken breasts in a single layer, bring back to a boil, then cover and remove from heat. Let sit for 20 minutes until fully cooked. Remove the chicken, let it rest for 10 minutes, then shred it using two forks.
In a medium bowl, mix the shredded chicken with ranch dressing and buffalo sauce. Preheat your oven to 400°F.
In a large ovenproof pot (like a Dutch Oven), heat olive oil over medium heat. Add the chopped onion and cook until softened. Reduce heat to low, add minced garlic, and cook for 1 minute, stirring constantly.
Pour in the chicken broth and bring to a gentle boil. Add the cellentani pasta, cover, and cook for 12-15 minutes until al dente, stirring occasionally to prevent sticking.
Once the pasta is cooked, stir in the chicken mixture, softened cream cheese, and 1 cup of shredded cheddar cheese. Season with salt and pepper to taste. Top with the remaining shredded cheddar and Monterey Jack cheese, sprinkle with minced jalapeño, and bake uncovered for 10-15 minutes until the cheese is melted and bubbly.
Serve hot and enjoy this creamy, cheesy, and spicy delight!
