Ingredients:
- 200g Biscuits (crushed for the base)
- 100g Melted Butter (for binding the biscuit base)
- 5 Eggs (for a rich and creamy texture)
- 700g Cream Cheese (full-fat for the best flavor)
- 100g Sugar (adjust to taste)
- 150g Melted Chocolate (dark or milk, for dipping)
- 2 Tablespoons Vegetable Oil (to thin the chocolate)
- 40g Hazelnut Kernels (chopped, for crunch)
Preparation:
1. Prepare the Base: In a bowl, mix the crushed biscuits with melted butter until well combined. Press the mixture firmly into a baking tray lined with parchment paper. Chill in the fridge for 10 minutes to set.
2. Make the Cheesecake Filling: In another bowl, beat the cream cheese until smooth. Gradually add the sugar and eggs, mixing until fully incorporated and creamy.
3. Bake: Pour the cheesecake filling over the prepared biscuit base. Bake in a preheated oven at 160°C (320°F) for 45 minutes or until the edges are set but the center still has a slight jiggle.
4. Cool and Chill: Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 2 hours or until firm.
5. Prepare the Chocolate Coating: Melt the chocolate with vegetable oil in a microwave or double boiler until smooth. Stir in the chopped hazelnuts.
6. Assemble the Bites: Cut the chilled cheesecake into bite-sized squares. Dip each square into the chocolate-hazelnut mixture, ensuring all sides are coated. Place on a parchment-lined tray and freeze for 15 minutes to set.
7. Serve and Enjoy: These decadent cheesecake bites are perfect for parties, desserts, or as a sweet treat. Store in an airtight container in the fridge for up to 5 days.
