Ingredients

For the Remoulade Sauce:

  • 1/2 cup mayonnaise (preferably Duke’s)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 medium scallion, finely chopped (optional)
  • 1 tablespoon finely chopped fresh parsley leaves
  • 1 tablespoon whole-grain or Creole mustard
  • 1/2 teaspoon paprika
  • 1/2 teaspoon hot sauce (Louisiana or Tabasco)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • Pinch cayenne pepper

For the Tomatoes:

  • 2/3 cup instant flour (such as Wondra), divided
  • 1 1/2 teaspoons kosher salt
  • 3/4 teaspoon paprika
  • 3/4 cup buttermilk
  • 1 large egg white
  • 1 1/2 teaspoons hot sauce (Louisiana or Tabasco)
  • 3/4 cup finely ground cornmeal
  • 3 unripe green tomatoes (about 1 1/2 pounds), sliced into 1/4-inch thick rounds
  • 1/2 cup canola oil

Preparation

Step 1: Make the Remoulade Sauce

In a small bowl, whisk together all remoulade sauce ingredients until smooth. Cover and refrigerate until ready to serve.

Step 2: Prepare the Dry and Wet Mixtures

In a wide, shallow bowl, combine 1/3 cup flour, 1 1/2 teaspoons salt, and 3/4 teaspoon paprika. In a second bowl, whisk together buttermilk, egg white, and 1 1/2 teaspoons hot sauce. In a third bowl, mix cornmeal and remaining 1/3 cup flour.

Step 3: Bread the Tomato Slices

Set a wire rack inside a rimmed baking sheet. Dip each tomato slice in the flour mixture, then the buttermilk mixture, and finally the cornmeal mixture. Place on the rack to set while heating the oil.

Step 4: Fry the Tomatoes

Heat canola oil in a cast-iron skillet over medium-high heat until shimmering. Fry 4-5 tomato slices at a time until golden brown, 3-5 minutes per side. Transfer to a paper towel-lined plate and repeat with remaining slices.

Step 5: Serve and Enjoy

Serve the crispy fried green tomatoes warm with the chilled remoulade sauce. Perfect for a Southern-style brunch, dinner, or game day snack!

Enjoy this delicious, crunchy treat that’s sure to impress your family and friends!
